H_D_C. Objectives
Students will be working in 20 teams
(each consisting of 4 students from the USA and 4 students from Ukraine) and all the teams via collaboration will be challenged to design
- a health article
- a meal plan,
- a prototype (device or test),
- a drug/medicine
- and demonstration
regarding one of five health-related case studies:
Diabetic, Celiac, Hyperlipidemia, and Tri-athlete with
anemia, and Cystic Fibrosis.
I. Real world situations
1. Diabetes:
A 15 year old sophomore has just been diagnosed with type II diabetes. He is 5’9” and
220lbs. A more appropriate weight for him would be 150-160lbs and he should be consuming between 1,500
to 1,800 calories per day. His parents also have type II diabetes due to their poor diet and lack of exercise.
The student has been told he can use a device to monitor his blood glucose levels, but is looking for more
guidance on monitoring his dietary carbohydrate. If he doesn’t get a handle on his diet and health he will
need to take medications to control his insulin levels. He would like his whole family to make changes in
their diet and get healthy but feels his parents are resistant to changing their lifestyle.
2. Celiac
: An 18 year old female was recently diagnosed with Celiac disease. She is headed to Tufts
University in the fall to study nutrition at the Friedman School of Nutrition. She is worried about monitoring
her severe gluten allergy as a new college student eating in dining halls and buying her own groceries,
especially since she loves breads, cereals etc. She is excited about the access of knowledge through her
nutrition program.
3. Hyperlipidemia:
A 6’, 175lb 46 year male CEO has just been diagnosed with high cholesterol. His LDL
levels are sky high and he needs to increase his low HDL levels. The extremely busy CEO regularly eats
breakfast of donuts, pastries and coffee provided by the office. Lunch is usually quick and unhealthy, and his
dinners are often with clients at restaurants or ordering in. He is finding it hard to manage his diet and is
seeking guidance. He needs to consume about 2,000 calories per day.
4. Triathlete with Anemia:
A 5’7”, 125lb 23 year old female is training to be on the US Triathlon team.
She trains rigorously all week, every week. She is getting close to reaching her elite status but has noticed her
performances continuing to decline race after race and she feels tired often. After having laboratory work
done her physician told her she had a combined iron deficiency anemia and B12 deficiency. The doctor
inquired about her recent dietary change from eating meat to a strict vegan diet. A female athlete of her
caliber needs to consume about 3,000 to 3,500 calories per day.
5. Cystic Fibrosis:
A 24 month old little boy had a 12 month history of recurrent lung infections and
particularly salty tasting skin noticed by his dad. The boy’s parents take him to a pediatric pulmonary
specialist for evaluation after a grueling year of illness and poor weight gain. After genetic testing is done,
the parents are told their little boy has cystic fibrosis. They are seeking guidance for a nutritional plan for
their son, and are overwhelmed by their lack of knowledge regarding this condition. The boy weighs 20lbs,
which is below the recommended 25-29lbs for his age. In order for him to gain weight and support his
disease the dietitian recommended 980-1200 calories per day.
II. Group roles:

_ Health Reporter (You also open the presentation w/ an intro to your case
study and details about the disease.)
- write & type a one-two page article on specific topic: approx.. 6 paragraphs-intro/overview of disease,
overview of case, paragraph on each of the parts below, and conclusion. You will have to collect the info
from your teammates as sort of an interview and then do the write-up. You must use the English writing
checklist. You may create an introductory slide with a list of the main things you’ll cover, but no extra
details.
_ Dietician
- design slides of a meal plan for specific case study (perhaps have a “foods to avoid” or “superfoods”, or
charts of nutrition facts on foods, i.e. amount of iron in certain foods, short meal plan example, or do by
breakfast/lunch/snacks/dinner ex’s.) You can also mention proper exercise to go along with your plan if
applicable.
_ Biotechnologist
- show how prototype (device or test) works to make life easier for the health condition with a demonstration
(create a name for the test or device)
-design 1-2 slides using bullet pts. with the above info and add a picture or quick video of your prototype
_ Pharmaceutical Researcher
- create a drug/medicine that will either help to manage symptoms, or optimally metabolize foods given the
condition (create a name for the medicine)
- design 1-2 slides using bullet pts. with the above info and add a picture or quick video of your prototype
